So it turns out that when there is a global pandemic going on and you are at home all.the.time, it’s not the best for your waist line when you make homemade pudding almost every night or try your hand at homemade pretzels or bread or cake or anything other than a fruit or vegetable. I’m not saying that these things are bad, because food is food, but at some point one must turn the tide. That happened about three weeks ago for us.
The goal with our menu plan now is to get 7-8 servings of fruits and vegetables a day. I am a planner so the best way for me to do this is to write it all down. And that’s what I did, from breakfast, two snacks, lunch and dinner. We had to have a plan. (Did I use the word “plan” enough for you in that paragraph? I really didn’t plan for that to happen.)
