Where has June gone?!? I feel like I say this every month, but really I can tell you where it’s gone: Vacation Bible School, Little Kids Camp, soccer camp, basketball practice, basketball games, haircuts, dentist appointments, etc. Basically I’ve spent the month of June as a glorified taxi driver. Anybody else?!?
Seriously though, I wouldn’t have it any other way. With one entering into high school and morphing into a man, I’m daily reminded that these days are fleeting. July promises to be much of the same, but with a few family getaways that I’m really looking forward to. Oh, and family pictures…but we’ll keep that between us. Our boys will NOT be thrilled with family pictures. Onward to this month’s menu plan…
It’s hot in my corner of the world. I plan on using my slow cooker as much as possible, eating lots of fresh fruits and veggies, and keeping meals as simple, nutritious, and as budget friendly as possible. Want to know how I plan to do this?!? MENU PLANNING!!

Scrambled Eggs and Bacon
I will also be cooking ahead each week so that mornings will go a little smoother each day. That way when someone sleeps in (I’m looking at you almost 14 year old!) or decided to get up early there will be something ready to go.

Grilled Sausage with peppers and onions
Grilled Chicken Wings
BLT’s with Fresh Tomatoes (And all God’s people said, “Amen!”)
Baked Potatoes and Salad
Vegetable Plate with Squash Casserole, Fresh Tomatoes, Fried Green Tomatoes, Simple Southern Green Beans, Cheesy Jalapeno Cornbread, and Macaroni and Cheese (Is macaroni and cheese a vegetable?!? I vote for yes!)
Normally, I have a freezer cooking session at my house where eight of us gather to prepare six meals. This month, freezer cooking is going to look a bit different since our schedule is so sporadic. So, what I’ll do this month is double or triple recipes when I make them and put one in the freezer. I plan on doubling the following recipes:
Homemade Wheat Sandwich Bread by Thriving Home Blog (I like to make this and before the last rise, I freeze it. Then I let it thaw all night and bake it in the morning. Fresh bread for breakfast? Yes, please!)
