Are you a planner? I am…and that’s putting it mildly. Each week I sit down with my calendar and plan out our week and menu. Planning out our week gives me a chance to look at the week ahead and see what we need to do to survive/prepare. For example, if we have ball practice or an appointment that afternoon I try to plan something simple, something that can be prepared ahead of time, or something in the crock pot. Everyone is informed and I’m able to feed my family healthy meals without losing my mind and my grocery budget. I used to just plan out dinner, but I’ve found over the years that having a plan for breakfast allows our mornings to be much less stressful. Do you plan your menus? How do you do it, by the month or by the week?
Here’s my menu plan for this week. I’ve included links to recipes if necessary:
English muffins, yogurt parfaits
Scrambled Eggs, Orange Cooler
PB Toast, peach smoothie (for this I just add 2 cups of almond milk, 1/2 c. greek yogurt, 2 c. frozen peaches and 2-3 Tablespoons of honey and then blend it in my mixer)
We usually have sandwiches, leftovers or my favorite simple, easy affordable salad (I’ll share this later!)
Swiss Chicken with aspapagus, brussel sprouts and carrots
Ham and Beans with slaw, baked apples and cornbread
Salmon Cakes with Mac and Cheese, broccoli, green peas and fresh pineapple
One Pan Enchiladas with chips and guacamole
In addition to all of this I have plenty of fruits, cheese, yogurt and other snacks.
