The week between school getting out and the first of June is always a freebie week for us. We’ll lay around the house, play outside, give the dog a bath and do various other things that the first of May did not allow time for…like breathing. Ahhh…summer is upon us. We’ll be grilling A LOT! Yahoo! Don’t you just love each season and how it brings change to menus?!? Here’s what we have planned this week:
Lunch-Now that the boys are home I will be serving a variety of healthy/nutritious lunch options…ha! That is if you call frozen pizza, corn dogs, peanut butter and jelly sandwiches and things like that healthy/nutritious. I don’t, but I gave up trying a while ago. I’ll have healthy things here to offer like fruits and vegetables.
Grilled chicken marinated in 1000 Island dressing (Try it! You’ll love it!), asparagus, broccoli, Microwaved Veggies
Tacos, chips and dip, guacamole
Grilled Pork Chops, sweet potatoes, broccoli, pineapple
Hamburgers, baked beans, broccoli salad
*Please note that we have three boys and we are on a constant quest to fill them up. Fred and I are always making adjustments to what we eat. For example…we do not eat sausage biscuits. On those days we will eat scrambled eggs or oatmeal. When the boys eat tacos we eat ours on a bed of lettuce and forgo the chips and dip and flour tortillas. When I make sandwiches I just eat meat, cheese, pickles and a few baked chips. Yeah…we don’t have the metabolism of an 11 year old. If there is ever a way to cut out carbs we try to do it, except on the last day of school. We all celebrate, right?!?
