Lean in closely. At the risk of being overly dramatic, I’m about to give you a simple recipe that will change your life. You will be the hit of the party, the favorite family member, and people will chase you down for this recipe. Seriously. My friend Stacy told me about these years ago. Her sweet mother in law makes them after Sunday lunch. They are SO simple and SO good you are going to doubt me, but please believe me, these will be your go-to dessert.
You start with a boxed 9×13 brownie mix. I got mine at Aldi. Just make the brownie mix according to the package directions. You know, just follow the box. But wait, before you pour the batter into your pan add a handful (or two) of chocolate chips. Yes, add them!
Now bake them according to the times on the box. Do not over bake your brownies! As soon as they come out of the oven, top the brownies with unwrapped Andes mints. You can use at few as 12 or as many as the entire package. This is your circus. You can see that I added the entire package.
Once you get the candies on the fresh from the oven brownies, start spreading out the Andes mints. They will be melted.
Get it all spread out evenly. Now this is your judgement call. You can eat them like this while they are hot or you can let them cool and then eat them. If you let them cool completely, the chocolate mint topping will get hard and make a delightful topping. I prefer to let them cool, but sometimes I just can’t wait.
If by chance you need to take these to a party and let’s just say that you you’d like to try one while they are hot. It will be perfectly acceptable to cut a brownie to try before you take them to the party. Perfectly acceptable. No one at the party will judge you once they take a bite of these brownies. Ask me how I know?!? Wink.
- 1 box of brownie mix, mixed according to package directions
- 1 cup of chocolate chips
- 1 box of Andes mints
- Mix brownies according to the package directions.
- Add one cup of chocolate chips.
- Bake according to package directions.
- As soon as brownies come out of oven, top with unwrapped Andes mints.
- Spread melted mints with knife.
- Serve immediately or allow to cool.
See. Could these Chocolate Mint Brownies be any simpler?!? Nope they could not. Make these for your next party or family event or Saturday night. You will not regret it. Now, if you’ll excuse me, I have some Chocolate Mint Brownies calling my name!
