This Simple Slow Cooker Bolognese Sauce is so delicious, you’ll want to serve it every week. Not only is it delicious, but it’s budget friendly, packed with veggies, and kid approved. Honestly, I don’t know what else you could want from dinner…well, maybe someone to plan it, shop for it, prepare it, and clean it all up?!? Hey, a girl can dream, right? But seriously, this sauce is delish. We like it on noodles or spaghetti squash or with roasted eggplant. Served with a simple salad, some garlic toast, this Slow Cooker Caramel Pie and you have a feast.
When I was in college I had some of the best friends, friends that are still in my life today. One of those friends was/is Melody. After college several of us got married and several continued educations, got jobs, etc. Then we all moved our separate ways. We were adults. Ha! Melody married Corey and they moved about 90 minutes away. Several months after Fred and I settled in our home, Melody and Corey moved about 5 minutes away from us. I was THRILLED! We would swap up cooking dinner about once a week. One night we went to their house and Melody cooked these Rotel Cream Cheese Enchiladas. It was literally the best thing I had EVER eaten.
It has been an unusually mild winter in our neck of the woods. The other day, it was cold and dreary and it just seemed like the perfect time for a bowl of ham and beans. I keep things really simple around here and I don’t even soak my beans. I literally dump a package of dry beans in the crockpot with lots of water, some chicken bouillon cubes, and a few spices. I turn that slow cooker on high and walk away. If I happen to have leftover ham, I add that…making this a perfectly simple and classic dinner.
Since we operate on a cash budget, eating at home as much as possible really is the best option. These Simple Fish Tacos are a favorite lunch option for us if we don’t have any leftovers.
