I love all things fall. I love boots and layers and football and changing leaves and ALL THINGS PUMPKIN! Yes, all things pumpkin. I love pumpkin lattes, pumpkin pie, pumpkin dump cake, pumpkin donuts, and this Pumpkin Snack Cake. But with all of that, do you know what I really love? My sweet seven year old still calls anything with pumpkin in the name, “punkin”. I know I should correct him, but I just can’t. We love tacos around this house. We could eat them for lunch or dinner. But what about breakfast?? Yep, we can eat them for breakfast too. The best thing about these Breakfast Tacos is how versatile they are. Don’t like bacon? Use crumbled sausage, chorizo, or diced ham. Have some leftover potatoes? Throw them in? Zucchini coming out your ears? Yep, that too.
But do you know what I like best about these Breakfast Tacos? You can make the filling ahead of time and then anyone in your home can heat up their taco in the morning and breakfast is served. All kinds of amazing right there. And hey, this is even great for a crowd. You can double, triple, or quadruple this recipe. Leave the meat out and let people create their own. In fact, I am the camp cook for our church’s youth group this summer and guess what I’ll be cooking?? Yep, these breakfast tacos.
These Sausage and Pancake Muffins are a family favorite around here. They are great for an on the go breakfast without syrup or a quick breakfast at home with syrup. Have I ever mentioned that I despise the smell of syrup? That’s why we can’t take this breakfast on the go with syrup. If the smell of syrup doesn’t bother you, then by all means, take these with syrup. My crew has found that these are also good with jelly or jam or plain.
Hi, my name is Jennifer and I do not like to waste food. I mean, it hurts my heart to throw food away. I’ll eat just about any combination of food just so I don’t have to throw it away. One day for lunch I had a spoon full of spaghetti, some corn salad, half a hamburger, and a salad…because the salad TOTALLY redeems that lunch, right?? And then one year after Thanksgiving I took all the leftovers home from Fred’s parent’s house and made it my personal mission to use them all. I “repurposed” all the leftovers and made 6 more meals. It was a blast.

Last weekend our oldest son was out of town with our church. I thought it would be a good idea for Jack to have two friends over to spend the night. While they went to bed fine, they all woke up at 3:00 am, ready to go. After a quick conversation, Fred encouraged them to head back to bed, which they did…until about 5:52 am. We are early birds around here so that time really wasn’t too bad. I laid in bed listening for a little while and low and behold those three fellas were making breakfast, specifically pancakes.
